This simple casserole takes advantage of both.\u00a0 It takes\u00a0only 20-30 minutes prep time and then bakes while I get myself together for the next school day.\u00a0 If it is a warm spring and we have mushrooms-I saut\u00e9 them along with the onions and toss them in too. This goes well with baked beans.\u00a0\u00a0<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 lb. fresh spinach, rinsed, steamed for a moment, chopped and well drained<\/li><li>1Tablespoon olive oil<\/li><li>2 med. sized onions, chopped<\/li><li>3-4 cloves garlic, minced<\/li><li>3 chicken or 2 duck eggs<\/li><li>\u00bd cup heavy cream<\/li><li>\u00bd cup shredded cheese (mozzarella or other)<\/li><li>\u00bd&nbsp; teaspoon Hungry Bear Farm garlic salt&nbsp;<\/li><li>dash of ground&nbsp;&nbsp;pepper<\/li><\/ul>\n\n\n\n<p>Caramelize the onion and garlic in a skillet by saut\u00e9ing slowly in the olive oil (about 20-30 minutes.&nbsp; While this is cooking, in a medium size bowl, beat the eggs with the cream.&nbsp; Add the seasoning to the egg mixture. Toss the spinach into the egg mixture and then place it in bake in a well greased 8&#215;8 casserole dish or similar size (Pyrex&nbsp;works best).&nbsp;&nbsp;&nbsp;Top with the saut\u00e9ed onions\/garlic mix and the cheese.&nbsp; Bake for about 30 minute at 350&nbsp;degrees. &nbsp;It is done when the eggs are fully cooked.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Two of my favorite parts of spring\u00a0-chickens and ducks have begun laying again\u00a0and there is tender delicious\u00a0spinach coming out of\u00a0the high tunnel!
